I think people who don’t even like bananas must like banana bread. It is such a tasty and comforting food, I personally love it! I have been trying to find the perfect homemade recipe for a while now, and after trying many different versions (some good and some AWFUL), I have finally found one that is just right. Of course, this banana bread recipe is by the one and only Mary Berry. I really should have known this one would be perfect from the get go because, let’s face it, this woman can do no wrong! If you didn’t know already, Mary Berry is one of my all-time favourite people. I would just love to go around to her house and sit all day chatting to her over cups of tea (and banana bread of course lol). I just think she is brilliant.
This banana bread recipe is ridiculously quick and easy to make and tastes just great! Here is what you will need:
Ingredients
- 100g (4oz) Softened Butter
- 175g (6oz) Caster Sugar:
- 2 Eggs
- 2 Ripe Bananas (mashed)
- 225g (8oz) Self-Raising Flour
- 1 tps Baking Powder
- 2 tbs Milk
I went a little bit rogue and also added a handful of chopped pecans. Alternatively, you could add walnuts or chocolate chips (which I wish I had done).
Step 1
Lightly grease your loaf tin, line it with non-stick parchment paper and pre-heat your oven to 180°C or 350°F.
Step 2
Add all of your ingredients into a mixing bowl and beat until they are well blended (about 2 minutes). Make sure your butter is very soft before you add it or it will be difficult to blend in. Alternatively, you can use an electric mixer.
Step 3
Pour the mixture into your lined tin and level the surface.
Step 4
Put it into the oven and bake for about 1 hour until it has risen and is a nice golden-brown colour.
Step 5
Remove from the oven and leave to cool in the tin for a few minutes before removing from the tin. Once it is out of the tin, remove the parchment paper and allow the cake to completely cool on a wire rack.
Once it has cooled, slice it up and tuck in! ?
I decorated mine with a little bit of icing sugar and some blueberries and raspberries, but of course this is not essential. To be honest I was just trying to make it look pretty so I could take a picture lol.
